Ingredients
2slicessourdough bread
1ripe Hass avocado
1tsplemon juice
½tspolive oil
Pinchof salt
2eggsfor sunny side up
1tspchili oilor more if you love spice
Fresh dillfor garnish
Instructions
Make the avocado smash: Scoop out the Hass avocado and mash it in a bowl with lemon juice, olive oil, and salt until creamy but slightly chunky.
Toast the sourdough: Lightly toast your sourdough slices until golden and crisp.
Cook the eggs: Heat a small non-stick pan. Crack in the eggs and cook sunny side up (3–4 minutes) until whites are set but yolks are runny.
Assemble: Spread the avocado smash generously on each sourdough slice. Top with a sunny side egg.
Finish: Drizzle with chili oil and sprinkle with fresh dill. Serve immediately.
